Teriyaki sauce is becoming increasingly popular in the UK. I can find a bottle of Teriyaki sauce in any supermarket nowadays. Of course, Teriyaki is very popular sauce in Japan as well, but I have never seen it sold in bottles in Japan. I have never bought myself, because it is so simple to make.
You will need just 1 Tbsp sugar, 2 Tbsp Soy sauce and 2 Tbsp Mirin. (you can buy Mirin in normal supermarket, but if you cannot buy it, you can substitute with 2 Tbsp white wine and 1 Tsp sugar)
Here is what I made with Teriyaki Sauce. It is not only a burger, but a Tofu burger!
We call Humberger ( don't ask me why). It is very popular food for a Japanese homemade meal. I used a Tofu and minced beef, but the most of time it is only minced beef and minced pork (which is called aibiki).
This burger is so soft and juicy inside. It is not like a thin BBQ burger.
Tofu Burger (make 4)
- Minced beef 300g
- Tofu 200g ( from previous blog recipe left over)
- 1/4 onion (chopped very small)
- 1tsp oil
- 1 Egg
- Panko (ideal is Japanese one, but you can use fresh bread crumb) 120ml
- Milk 2 Tbsp
- Salt & pepper
- 1 Tbs oil
Teriyaki Sauce
- Sugar 1 Tbsp
- Soy sauce 2 Tbsp
- Mirin 2 Tbsp
- Put the chopped onion into a microwavable dish and add 1 tsp oil, covering with cling film. Microwave for 1 minute and leave to cool down
- In a small cup, soak the bread crumbs with milk
- In a large bowl, mix the beef, tofu, egg, cooled onion, and soaked bread crumbs.
- Season with salt and pepper
- Add 1tbsp oil to a large pan on medium heat. Separate the burger mixture into four balls and shape into a small oval. Push down the middle of the oval as this helps it to cook evenly. When you cook the burgers, the middle bit will raise up.
- Cook well on both sides and turn the heat down to cook inside thoroughly
- Mix the Teriyaki sauce well - don't worry too much about not dissolving sugar. Then turn the heat up the frying pan. Add Teriyaki sauce and cook until it bubbles and turns into a glossy sauce.
As you can see, I served the burger with grated Mooli (white radish) and thin cut basil. This is just optional. Of course you can eat with buns, but I would like to eat it with plain Japanese rice!
The Japanese Shop is so lovely. I think this plate is really feminine. It says
Sushi Plate, but you can use anything, can't you? To use your imagination, you can use this plate not only for meals, but also snacks, nibbles for party, etc.
Just quickly about Teriyaki, when I go back to Japan, I always have a Teriyaki burger at McDonald's. Have you had one if you have been to Japan before? It has such nice glossy sauce and
(I think) a little bit of ginger with lettuce and mayonnaise inside. It is so tasty!
Also Mos Burger's burgers are nice,too. Oh I miss Japan!
